Cupcakes alfajor

  • 1/2 cup (115g) unsalted butter 
  • 2/3 cup sugar 
  • 2 eggs and 2 egg yolks 
  • 1 teaspoon vanilla extract
  • 1 cup flour 
  • 1/2 cup cornstarch 
  • 1 1/2 teaspoons baking powder 
  • pinch of salt 
  • 1/4 cup plain yogurt


  1. Preheat the oven to 180 ˚ C. In a bowl, sift the flour, cornstarch, baking powder and salt together. Beat the butter and sugar until the mixture turns pale and fluffy. It takes about 4 minutes.
  2. Add the eggs and yolks, one by one. Finally, stir in the vanilla extract.
  3. Alternate adding the dry ingredients and yogurt to the batter, beating only until incorporated.
  4. Bake for 18 minutes or until a toothpick inserted into the center of each comes out clean. Expect cool completely for the next step!
