New Year's cream puffs

Cream puffs Ingredients: 

  • 250ml water, 
  • 90g butter, 
  • 1 teaspoon salt, 
  • cup of flour, 
  • 3 eggs.

Prepare puff: 
  1. A saucepan add water and toss the diced butter.
  2. Put on the heat and bring to a very light boil. 
  3. Turn off the heat and add flour, whole wooden spoon stir until the mixture is uniform. 
  4. Set aside to cool. Insert the eggs one at each time mixing. 
  5. Shape into small balls on baking paper. bake in preheated oven at 200 degrees for 15-20 minutes (depending on the size of the puff).

Filling Ingredients:

  • 150g smoked salmon,
  • fresh dill 1 bunch, 
  • 300g ricotta, 
  • salt, 
  • pepper, 
  • 3 tablespoons of cream.

Prepare the filling:

  1. chop the salmon into smaller pieces. 
  2. Chop the dill. Throw cheese into a bowl, take cream, dill and salmon. 
  3. All mix. Season to taste with salt and pepper. 

Prepare puff:

  1. Once cooled cut it in half cream puffs. Put the filling inside.
