Chicken hamburgers with mushroom sauce


  • 500g boned chicken breast
  • 100g mushrooms
  • 2 tablespoons parsely leaves
  • 2 cloves of garlic
  • a tablespoon of lemon juice
  • a teaspoon of salt
  • a pinch of ground pepper
  • one egg
  • 50g breadcrumbs
  • extra virgin olive oil, for frying.

Mushroom sauce: 

  • 200g mushrooms
  • 100g peeled onion
  • 70ml extra virgin olive oil
  • 20g flour
  • 250ml whole milk
  • salt
  • pepper
  • nutmeg


  1. In a food processor, mix the chicken breast with the mushrooms (cleaned well and chopped), the parsley, the peeled garlic, the lemon juice, the salt, pepper and egg. Blend until you get a smooth mixture, adding a few breadcrumbs, so the mixture becomes more moldable.
  2. With your hands prepare medium-sized hamburgers and keep in the fridge.
  3. Meanwhile, prepare the sauce by heating the oil in a saucepan and adding the finely chopped mushrooms and onion. Leave to sauté for 10 minutes on a medium heat. Then add the flour and stir for a few seconds.
  4. Cover with the milk, season to taste with the salt, pepper and nutmeg, and leave to cook on a low heat for 10 minutes, stirring frequently. At the end, triturate with a blender until you get a smooth sauce, and adjust the seasoning, if necessary.
