Ultimate Clubhouse Sandwich


  • 1 chicken breast fillet
  • juice of half a lemon
  • 1 tablespoon olive oil
  • 1 egg, beaten
  • salt and pepper to season
  • 1 slice Canadian bacon
  • 2 slices white bread
  • 3/4 tablespoon mayonnaise
  • 1 leaf iceberg lettuce
  • 1/4 avocado, julienned
  • 1 slice wheat bread
  • 1/2 tablespoon Dijon or Pommery mustard
  • 1/4 mango, julienned
  • salad tomato, sliced thinly into circles


1  Marinate chicken in lemon juice and olive oil for at least 1 hour.

  Season egg with salt and fry on a non-stick pan until done and set aside.

  Fry the Canadian bacon until crisp then set aside.

  Season marinated chicken with salt and pepper and grill until done. Let rest for 5 minutes before slicing thinly on a bias.

  To assemble, layer everything in this order: a slice of white bread; layer of mayonnaise; lettuce; grilled chicken; avocado; slice of wheat bread; mustard; egg; bacon; mangoes; tomatoes; and finally the last slice of white bread. Secure the 4 sides with cocktail toothpicks and slice the sandwich into two diagonally.
