Ojja (Aijja)


  • 4 Eggs
  • 4 Garlic Cloves
  • Tube Tomato Paste
  • 1/2 Tspoon Harrissa
  • 2 Red Peppers
  • pinch Salt
  • 4 Tspoon Oil
  • pinch Caraway Seeds


First of all; Peel garlic and crush it together with caraway seeds and a large pinch of salt. grind the tomato’s puree in a glass of water.
Then, Heat oil , add tomato, harissa, the ground pepper and other crushed condiments .
After that, fry it covered for about twenty minutes. Stir from time to time and add some water whenever it is necessary.
Finally; Add eggs, Mix well and once it is well cooked, correct salt according to taste, remove it from the cooker and serve it hot.
